We’re leaving the rainy days behind us, Summer is finally here. BBQs ready, cocktails in the sunshine and light fish dishes take over the menu at Una Kitchen.
Our Head Chef, Glenn Gatland, is excited to share his favourite summer recipe – Cornish Crab Linguini.
Una’s chilli crab linguini is one of my personal favourites, it sums up how carefully chosen ingredients can be combined to create an outstanding memorable dish in just a few minutes. I source the crab from St Ives, it’s fresh, sweet and full of flavour. I also use Cornish butter and flat-leaf parsley from our own herb garden here at the resort. This guarantees the best natural and delicate flavour. Crab linguini is the perfect dish for those hot summer evenings.

The recipe
Serves four
Ingredients
- 250g dried linguini
- 250ml fish stock
- 125g butter (1cm dice)
- 125ml white wine
- 2 chillis (add more if you like it spicy)
- 2 cloves of garlic
- 2 tablespoons chopped flat-leaf parsley
- 250g white Cornish white meat
- 2 tablespoons of extra virgin olive oil
Method
Cook the linguini according to the instructions on the packaging, drain in a sieve or colander and rinse with cold water. Place to one side.
Finely chop both the garlic and chillis. Heat a large frying pan and add a small amount of extra virgin olive oil, add the chilli and garlic and fry on a medium heat for one minute.
Add the white wine and reduce by half, then add the fish stock and tun the heat upto high and boil vigorously. Once boiling, add the butter and wait for the sauce to emulsify and thicken, remove from the heat.
Add the cooked linguini and crab and stir through the sauce. Finally, add the chopped flat-leaf parsley, the sauce should coat the pasta. You can adjust the amount of spice by increasing or reducing the amount of chilli you add.
Serve with a glass of dry or medium white wine. We love pairing this delicate dish with a glass of Chenin Blanc.
