Our kitchen team, expertly led by Head Chef Glenn Gatland, shares a wealth of foodie experience. Between them, they create Mediterranean inspired wood-fired cuisine that champions local, seasonal produce.
A Cornishman, Glenn was trained in and ran some of the best kitchens in the South West until becoming Head Chef at Hell Bay on the Isles of Scilly. Whilst there, he and his team were awarded 3 AA Rosettes, drawing food lovers to the remote island location.
After five years on Bryher, Glenn moved to the neighbouring island of Tresco, where he was responsible for three very different food operations. The New Inn, a favourite of visiting yachtsmen, currently holds one AA Rosette for its gastropub menu; The Flying Boat Club is renowned for its use of local produce, and The Ruin Beach Café offers laid back dining in one of Tresco’s most idyllic beach locations. In March 2017, after 10 years on the Isles, Glenn relocated back to the mainland with his wife Tracey and son Jack.
Since joining Una Kitchen, he’s led his team to success with a menu of laid back Mediterranean inspired dishes; most recently winning a Gold Cornwall Tourism Award for 2020.
